I am thinking of making some bread (have made it before in the past, but am now a bit out of practice at it
) and was wondering if it's ok to let the dough rise overnight?
I usually make it by hand, and let it rise twice.
I just thought it would save a bit of time and hassle in the morning if I just got the dough out of the fridge, rather than having to do all the weighing and kneading first thing.

Yes, that's perfectly fine, put it in the fridge, it will have risen by morning and will have a much fuller flavour than bread raised the same day.
I make my pizza dough on a Mon/Te and keep it going through the week, by Fri/Sat it's delicious!Accept your past without regret, handle your present with confidence and face your future without fear0
