In my freezer ...

I know you are all very inventive on here and I am looking for some ideas - In my freezer I have a large leg of lamb, also 20 frozen angus steak burgers and a tray of chicken wings (the burgers and wings were left over from my DD1's graduation). My problem is that I have little money left to last the month and I am trying to live from the freezer and cupboards (which are pretty full - pasta, rice, spices etc) - but this week (Mon to Thurs) there is just me and my DD2 (21)(doesnt like burgers or lamb!) and DD3 (10) (who doesnt like burgers ) to feed - My DS (12) is at home on Friday but goes away again on Sat - I would of done a nice roast with the lamb on Sunday but only me and my DD3 would eat it and that doesnt help with the rest of the week - any ideas for inventive ways to use burgers, chicken wings and a lamb leg would be most wellcome - thanks

    A good chicken wings recipe I use to make sticky BBQ wings

    Tomato sauce
    Veg stock ( not even half a glass)
    Sweet chilli sauce (if u have any) or something similar
    Butter

    Add a spoon of each except the stock to a pan to melt it all together with the butter then add the stock simmer to reduce a bit

    Add to already baked chicken wings then put back in oven for about 15 minutes

    I usually serve with homemade chips/wedges and corn on the cobs but this would go nice with a side of rice/pasta, you could make up extra veg stock when making the BBQ sauce and add it to some rice the stir fry in whatever veg you have
  • Does your DD2 and DD3 like normal mince? You could always break the burgers up and make meatballs out of them. You could turn the roast lamb into shepherds pie, you mince up the cold meat in a food processor and make it as normal. Just a few ideas, if your little ones are ok with mince dishes xx

  • You could also slow cook some of the wings til the meat can be pulled off and make a casserole, curry or soup. Chicken and rice soup is nice a filling, or spaghetti could be added to make it chicken noodle.


    Burgers are essentially just mince meat so could be cooked and crumbled up and added to a tomato sauce to make spat Bol, chilli etc since you have pasta already, just need passata or tinned tomatoes, bit garlic, onion and herbs for spag Bol or chilli powder paprika garlic for chilli.

    Could also be used for a shepards pie if u can get potatoes, crumbled up in gravy/beef stock and baked with masked potato on top, a favourite of mine is to add some curry powder to the mince for a different taste

    Shape the burgers into meatballs? Or flatten them out and make scotch eggs? Use them for filling pastry like sausage rolls? Do it when they aren't there and they will never know ;-)

  • If you have the ingredients to make a pizza base or can get a French loaf/ baguettes/ bread rolls the burgers could be used to make mince meat pizzas.

    Tomato sauce and the meat with some veg already cooked (can use leftover spag Bol or chilli if you decide to make any of these) then top with cheese and some Italian herbs and bake.

    You could add some of the lamb and chicken if you have any leftover and make a 'meat feast' pizza.

    Thanks some great ideas - never thought of using burgers as 'mince' - DD3 likes meat balls with spghetti so could easily do that! recipe for BBQ chicken wings sounds great - got a few potatos so could do wedges and might have a couple corn cobs in freezer so thats another meal!

    can i make pizza base with plain flour or does it have to be bread flour? I have plain and SR flour in and yeast but no bread flour!
  • I should think you can, perhaps not as stretchy as there'll be less gluten but no reason why it shouldn't work.

    My mum showed me how to make a pizza base that you fried in a frying pan - very tasty.

    1 cup flour, 1 tsp baking powder, salt and pepper, 3 tbsp water.

    Mix dry ingredients, add water and knead into a dough. Roll into a circle to fit frying pan. Oil pan and heat. Fry dough for 5 mins, turn and fry for a few mins more. Add toppings and cook for 5 more mins.

    Thanks - some great ideas! I am following slimming world
    My menu plan for the week looks like this:


    Breakfasts - cereal or toast - plus fruit - i have a few apples and pears and also a water melon and some grapes so enough to do until midweek


    Lunches - packed lunch for DD3 (found some sandwich thins in freezer and have 2 tins of tuna and other packed lunch bits in store cupboard that should last the week) and I will take some HM soup and crispbreads. DD2 is in work and will get her own lunch- got enough bits to do most of the week I think
    Need to get fruit, veg, passata, eggs and milk but hopefully can wait til Wed at the earliest


    Mon - DD2 and 3 - Home made Pizza - going to try to make pizza base with plain flour topped with tomato suace ham (that goes out of date tomorrow), salami and cheese. I will have home made soup made with veg from the bottom of the fridge that needs using up.
    Tues- cooked breakfast - got a couple of quorn suasages in freezer, plus bacon, egg (got 2 left), oven cooked home made potato wedges and beans (I will have some roasted toms too)
    Wed - DD3 goes to a club where she gets fed so I will have leftover chilli and rice from the freezer - no idea what DD2 will have yet
    Thurs - use burgers and turn into meatballs with tomato sauce made with passata and store cupboard bits with pasta (will potion some up for the freezer too)
    Fri - working from home so will cook lamb leg and have with potatoes and veg
    Sat - fake away lamb fried rice with curry sauce (the chinese one you can make up from a concentrate that I have in the cupboard) - rest of lamb will be turned into a shephers pie for the next week and another meal - probably pitta breads with cous cous and yougurt and mint dressing
    Sun - BBQ chicken wings with poato wedges and corn on the cob


    Thats not too bad and shopping should be less than £15 if i can stick to what I need! (do need toilet roll!)


    Off to work on the week afters menu now!
