Pickled cucumbers anyone?

Before I went away I pickled some cucumber I had in the fridge to avoid throwing it away.
Now I've returned, but what on earth to I do with sliced pickled cucumber?

  • I use it as a side salad dish with all sorts of veggie food, also love it with cheese and crackers or oatcakes. You could use it on burgers....am a bit stumped for meat ideas as I'm a veggie. If you make your own dips, would be nice chopped up with maybe some onion, or in a raita.

    delicious with cheese pork pie etc. Also very good with cooked pork dishes (although I assume your pickle is made in vinegar instead of fermented in brine you can use Polish and Eastern European cuisine as inspiration for when to eat pickles) you can serve the pickled cucumbers as a cross between a relish and an extra vegetable.
    Also there are lots of recipes online for Polish Pickle Soup which you mght like to try

    Good in burgers. I put it into pastrami or salt beef sandwiches for DH's lunches. We also like it chopped in salmon mayonnaise sandwiches.

    Here you are assuming pickled in vinegar, and when I wrote my post was only thinking of pickled in brine, as that's how I do mine!:o
    Ah well, perhaps the OP will let us know.
  • Yes pickled in vinegar, I love all these ideas, and I've got oatcakes and cheese in too, plus I've made pulled pork for dinner tomorrow, so will try the pickles on the side
