I did think about refridgerating them before cooking - but freezing for 20 mins is also an excellent idea!!

i dont think it matter whether you put breadcrumbs or eggs or not, but make sure you squash them together well then leave them in the fridge for at least an hour before you cook them... they should be fine then... and if you add onion i always prefer fried onion to raw onion as raw onion tastes a bit 'raw' to me still... and a dollop of ketchup makes them really tasty0

I never put breadcrumbs into my burgers either - but I do sometimes put a handful of porrige oats or a couple of squished up Weetabix.
I also always add a couple of grated carrots. These add moisture to help the mix stick together. My turkish friend taught me to make kofta kebabs which are basically burgers
Tear bread and soak in water for a while
put mince in a bowl with coriander or any seasoning you want
squeeze the bread to get most of the water out
Then add to the mince and mix well
Shape and make sure that it is all compacted well then cook on BBQBlessed are the cracked for they are the ones that let in the light

I made burgers the other day and for some reason decided to use porridge oats instead of breadcrumbs (always looking for a shortcut!) and it was fantastic. I'm funny about textures and it held them together so much better and the 'bite' was perfect. It's definitely woth a go and you can't taste the oats at all.0

My Mum makes small amounts of breadcrumbs by using crusts and simply scraping the inside of them with a knife. Any big bits can be broken up afterwards.
[BUT large breadcrumbs and onions (+ some spices that I must ask her about) make really nice tasty, moist burgers if you fry them slowly till they have a nice crust on each side and serve on a plate with ketchup. Not so great for a BBQ or bun though as they can fall apart a bit when eating.]0 -
I know its cheating but have been stocking up on the Waitrose Organic burgers. You get 8 in each box (frozen) and you get 2 packets for £3. They are delish and great quality.
