A couple of Oxo cubes make a difference if something's a bit bland, or a can of tomatoes/puree. And potatoes, lentils and pearl barley are great thickeners.
As for liquid/veg, I just use enough stock to cover the veg while they're cooking. Then when I blend the soup, I add the stock in as I need it - rather than all at once.0 -
Easy tasty soup which is hard to get wrong:
Peel and chop equal amounts of leeks,carrots, potato - I do 2 leeks worth using the green bits too. Put about 25-50g of butter in a large pan, cook the veg for about 5 minutes, turning occassionlly until they start to soften. Cover with about 1.5-2 pints of stock (I use marigold boullion), add some fresh ground black pepper, cook for at least 30 minutes, blend either fully to give a thick soup of half and half to give a lumpy one. You can replace the potato with acorn squash for a sweeter soup.The birds of sadness may fly overhead but don't let them nest in your hair0 -
I like to add Knorr veg granules to my lentil or potato soup, just gives it a bit of oomph. But here is my recipe for a really quick soup
I make this in a few minutes and its cheap, easy and healthy. Its Tomato soup
2 tins of own brand tomatoes
1 tin of own brand carrots
1 tins of own brand beans
6 medium pickled onions halved
1 chicken or veg stock cube
i add 2 sweeteners but this is optional
I add a small cube of frozen chilli and 1 of frozen garlic (Dorot) from supermarket, Asda is only place I have found these but quick and easy for spicing up sauce and soups.
Add everything to the pot with 1 pint of water, blend, dahdah thats your soup ready. I don't like beans or pickled onions but you can't taste either, just a easy healthy quick soup. You can also add less water and use as a Bolognese sauce by adding other veg to it.0
