Last Night of the Proms party

On Saturday, I am hosting a 'Last Night of the Proms' party for 10 persons.
I have ordered Union Jack tableware, made some UJ bunting, set the dress code as 'patriotic' and will be preparing UJ themed song-sheets.
What would you suggest for a menu?
I would like to include something from England, Ireland, Scotland (maybe the last time!!!) and Wales, so four courses.
England suggest something with beef, but I am not so familiar with the cooking of the other countries.
Also, any ideas for entertainment? I will make up a selection of British-themed 'quiz cards' like you get in pubs just in case there is a lull in conversation.
Apart from the singing, do you have any ideas? Anybody done this before?

I can only really talk about North Wales here but there are plenty of options.
Anything with Welsh lamb could represent Wales and if you did a Scotch broth, you could combine us with our Celtic Cousins.
If you have a beef stew to represent England, why not have Welsh Rarebit croutons to go in it? Or onion cake which is a layered potato and onion dish as a side. There's also lobscouse which is popular in both Liverpool and Wales. Hamburg seems to have a version too because it seems to have been a sailing dish.
Served with a Scotch Roll and a pint of Guiness, you've got the lot!
Or what about a Bara Brith teabread for pudding? Spread with salted butter or served with cheese. Welsh Cakes (Cacen Cri) are also delightful and are something of an obsession of Mr Maity's (a full blooded Welsh speaking Welshman)
Singing is also very Welsh, there are some great folk songs to go with like Sospan Bach, Mwyfanwy and our anthem Land of Our Fathers.

Loving the Scottish smoked salmon idea. Apple pie could be made with the apples from one of my guest's gardens (and blackberries from the field just outside the back garden)

Soda bread rolled into a circle and cut into 4 triangular pieces then cooked on a cast iron griddle/heavy frying pan on the stove top , takes about 20 minutes and you rutn them every 5 until they're golden brown on the outside and cooked through on the inside. They sell them in W8rose if you don't want to make them yourself.0

Welsh rarebit would make a very good cheese course, great idea.
