I make a nice spinach pasta with frozen spinach and I thought dried may work the same.

It's always worth experimenting - especially when the leaves are free. Try drying some and seeing how it works out.

dried would work for soup or seasoning but I'd add to dishes dry like herbs.

I'd freeze what will fit and dry what won't.

I want mint.. for my new spudatoes and things.. but I just seem to kill it off at the first opportunity!

I've never met anyone who can kill off mint! The usual problem is that it spreads and tries to take over the garden.

if you are going to freeze nettles it's best to do it like spinach ie blanche, squeeze out all water and freeze or blanche, chop finely, cook down with or without seasoning, freeze.

I never blanch spinach before freezing, actually I do very little to it except bang it in the freezer. However I have it in my smoothies so its all blended up and doesn't make a difference what it looks like. Otherwise its just in a pasta so it gets all mushed up. I'm a fan of doing as least prep as possible :rotfl:
