Frozen Nectarines

I'm trying to use up some of my freezer stock and have some frozen nectarines (halved and stoned). I was thinking of doing a kind of compote with a ginger syrup (have some ginger in a jar in the fridge).
Anyone got any other suggestions though? Preferably not a crumble as i'm a bit crumbled out from a glut of blackberries

I like grilled peaches so maybe you could grill the nectarines and serve with some natural yogurt, honey and some kind of nut? Nectarine frozen yoghurt?
I do think your compote sounds really lovely though and something where the fruit is pureed is probably the right way to go with frozen ones.Saving for deposit: Finished! :j

Make some Hairy Dieters rice pudding and serve warmed nectarines with it.
The rice pud is cooked on the stove top.
100g pudding rice
200ml water
400ml milk
1 tsp golden caster sugar (I use ordinary granulated).
1 tsp vanilla essence
Bung everything into a saucepan and put on the stove stirring occasionally - do not let it boil as soon as you see bubbles forming turn it down. Stir constantly until thickened. When thickened it is ready to serve.
It serves 4 people (can be served hot or cold).

I used nectarines to make a mango-style chutney - chopped small, some white vinegar, white sugar, finely chopped onion & coarse ground chilli. Cooked it off till it went syrupy & kept in a loc'n'loc in the fridge. It ALL went with our next curry (but was v scrummy!):mad: :j:D:beer::eek::A:p:rotfl::cool::):(:T0
