adapting a recipe...Help!

Morning all!
I wonder if you lovely lot can help me. Hubs and I love this recipe

But, I have recently turned vegan, we thought maybe sweet potato might be a good alternative to the chicken, do you agree? Or can you suggest something else?
If I was to make it with sweet potato, how is the best way to cook the potato?

What about using tofu? cook it as stated for chicken.Sealed pot challenge member 4370

I don't really have any experience of cooking with tofu, I don't understand the whole pressing it etc, so it makes me nervous.0

You don't need to press it if you buy the firm one, just cut it in cubes. Alternatively just use all the veg for the gumbo, omit the chicken and add a good handful of cashew nuts.
Or you can use soya chunks instead of chicken but be aware that you need more liquid as it absorbs lots of liquid.
Or you can use seitan or tempeh. Google these to find out where to buy. As a vegan you might find them very useful sources of protein anyway.

I'd replace the chicken with chick peas or kidney/turtle beans.
I think aubergine would give you a better mouth feel than sweet potato in this dish - sweet potato will cook to mush fairly easily.

+1 for trying aubergine, have used it successfully in curries - brown in oil and spices then add the sauce ingredients and simmer.
Chickpeas have good protein content though so may be a good addition for a vegan diet?0 -
Beans would be good.
Tofu pressing is easy if you want it a bit firmer than it comes out of the packet. Just get a couple of plates, a couple of towels or some kitchen roll and something heavy. Cut the tofu up, put in on a plate with towels on top and underneath it, put the other plate on top with the heavy thing and that's that. Leave it for a bit and you're ready to go.0 -
Another thing you can do with tofu is to freeze it, then thaw it out and squeeze out all the moisture. The texture is completely different and might work better than just pressed tofu as it will stay firmer.

Those are nice and the texture will be closer to what you're looking for. Frys do a similar one - both are available at Holland and Barrett too. Tofu is very soft and would break up (although once frozen and thawed it does stay firmer).0 -
