Basic spice mix is fine - but you won't get a dark cake unless you use demerara sugar.
What may push the price of your cake up is the marzipan & fondant icing to cover it, as these aren't cheap.
I'm thinking about just making a little royal icicing on the top and sprinkling with silver balls?I can resist anything but temptation.0 -
I love royal icing - good call! If you want a dark fruit cake but don't want to buy demerara then one or two of tablespoons of black treacle or molasses will do the trick - otherwise I think castor will be fine for flavour because demerara isn't a strong taste like dark brown sugar anyway.0
