Lentils; the supercheap superfood.

Adapted from an internet recipe.
(as you can tell by all the annotations)
Ingredients
2 tsps olive oil
8 thin sausages (recipe says beef but any would work)
2 red onions, thinly sliced (I used white)
400g can brown lentils, drained (or substitute cooked dried, but not sure on quantity!)
190g jar sun-dried tomato pesto (equate Mr T value red pesto)
2 cups water
2 tsp dried parsley (or mixed herbs or omit)
Pkt cheese sauce, made up as directed
Grated cheese to taste
250g lasagne sheets
Cook sausages in oil, drain, remove from pan and slice finely.
Fry onions in remaining oil in pan, and stir in cooked lentils, pesto, water and herbs.
Layer in large ovenproof bowl with lasagne sheets, finishing with white sauce and grated cheese on top.
Bake at 200 degrees C for 40 mins or until cooked. Serves 6 and freezes ok.0 -

None of them are my recipes, all borrowed mainly from here!
Lentil Pate thanks to Weezl of the 50p fame
150g red lentils 11p
¾ pt water or vegetable stock left over from last time you boiled or steamed any veg
2 medium onions 8p
3 cloves garlic 9p
2 tablespoons sesame oil or olive oil 11p
3 tsp dried mixed herbs 5p
2 slices whole wheat bread crumbs 2p
1 teaspoon sea salt, to taste (may sub regular salt) 1p
1/2 teaspoon fresh ground black pepper, to taste 1p
1 teaspoon white wine vinegar 2p
Prices from asda total-50p, made approx 25-30 sandwiches last time I did it, so about 2p per sandwich, no need for butter.
Wash lentils, drain, and place in a saucepan.
Add the water or stock, bring to a boil, reduce heat to medium, and simmer, covered, for 20 minutes.
Chop the onions and the garlic very finely.
In a large frying pan, heat the oil.
Add the garlic, onions, and herbs and saute over medium heat, stirring, for about 10 minutes, or until the onions and garlic are brown.
When the lentils are done, stir them thoroughly to mash, add the onion mixture.
Season to taste with sea salt, vinegar, and pepper.

Cheese and Lentil Bake
Preparation Time:20 mins
Cooking Time: 45-50 mins
Serves: 4
Ingredients
6oz red lentils
12fl oz water
4oz grated cheddar
1 onion finely chopped (and/or some finely chopped red pepper)
1 egg
1 teaspoon butter/margarine
herbs/salt and pepper to taste.
Instructions
1. Pre heat the oven to gas mark 5.
2. Wash lentils and cook for 10-15 minutes in water until pureed. Mix in cheese, onion/pepper, herbs and seasoning. Beat in egg.
3. Grease 1lb loaf tin and pour in mixture. Bake for 45-50 minutes until top is golden brown and firm to touch.
4. Stand for 10 minutes before turning out of tin if loaf shape is desired.
This works well as a vegetarian 'sunday roast' or with salad.

Lentil Bolegenese. Simple but not really a recipe, just chuck it all in a pan. Fry an onion & garlic clove in oil, add washed lentils, (about 50g per person?) add a pint of stock and let that simmer for about 20 mins. Then add tinned tomatoes/passata, herbs, and whatever you fancy ( I like worcester sauce, balsamic vinegar, tomato puree, marmite/bovril, s&p, Roasted veggies, mushrooms, its different everytime!) Serve with pasta and cheese and watch the kids devour it!!0 -
Daisyroots, what do you do with the sprouted lentils? Do you cook them or eat them raw with a salad?

I like lentils, but they really don't seem to like me at all - I'm usually tough as old boots, but these little blighters make me blow up like Verruca Salt!

i bought a big bag of dried lentils after so many of you on here recomened them to bulk out meals anyway i was wondering if theres anything else i could do with them, so far have chucked them in bloignase, chilli and slow cooker stews etc, can they be used for dishes in their own right rather than just a bulker.oh does anybody have any crazy lentil recipies like lentil cookies (they sound really good to me right now but im very very hungry and dp is messing in the kitchen making pie ...very slowly).twins on board0
