Preparing potatoes in advance?

If I peeled a load of potaotes tonight for cooking and mashing and left them cut into pieces in salted water with a lid on, would they still be ok to cook tomorrow night or would they go all soft and sort of disolve in that time?
I am working all day tomorrow and was planning a cottage pie for tea tommorrow night. I thought it would save me loads of time if the prep had all been done so they could just be switched straight on to boil.
Thanks

They should keep ok, or if you have time you could even parboil and refrigerate, so you can just mash them when they need to go on the pie. If you have a slow cooker you could even prepare the pie filling in advance! Finally I'm an OAP and can travel free (in London at least!).0

You could steep them in a bowl of plain water, then rinse and add fresh water for cooking, or cook and keep in the fridge overnight until you're ready to mash and top the pie tomorrow.I'm an adult and I can eat whatever I want whenever I want and I wish someone would take this power from me.

Hi,
make the pie today, leave in fridge when cool, or freeze and leave out in morning when you go to work, save even more time tomorrow.0 -

I often do this to save time on busy days.
I also do it with bolegnese sauce & chilli as I think they taste better after being stood for a few hours.Try to be a rainbow in someone's cloud.0
