Eggless...

My 9 month old baby has developed an egg allergy in the last month or so so I am having to be very careful about what I can give him to make sure there is no egg in it (or any egg derivitives like powdered egg etc).

I used to make cakes quite a lot before I was pregnant and things like homemadfe fish-cakes/chicken kievs/fingers for dinner.

Does anyone have any tried and tested eggless cake recipies, and/or any ideas how best to bind breadcrumbs to homemade fishcakes/chicken breasts without using egg as the binding agent?

I did google a couple of eggless cakes, but it's so hard to know whether they are any good or not really so figured it would be a lot easier to have some recommendations of tried and tested ones.

I make this all the time

Banana cake

4oz marg
4oz sugar
2 bananas over ripe and mashed
5 oz self raising flour

Cream marg and sugar
beat in mashed banana
fold in self raising flour

put in greased loaf tin bake 35/40 mins at 180c
stand 20 mins before turning out

double recipe to make 12/13 muffins

I would also check out vegan recipes as this will give you some good ideas about what to use to replace eggs in your normal recipes. For example you can use ground flax seeds mixed with water in chocolate fudge brownie.

Soaking the chicken breasts in buttermilk is a good alternative to using egg to bind free breadcrumbs for nuggets - it also makes the chicken really tender. I normally put the chicken in the buttermilk in the morning so it has a good few hours to marinate. Guess you could also use yoghurt but haven't tried it x

I find things like bubble & squeak fry up/brown perfectly well without an egg & breadcrumb coating. You could try the same with your fishcake mixture or maybe roll them in floured hands first.

I've made a few varieties of vinegar cake,and whilst looking for the recipe,came across this site.Otherwise I don't really have any experience of egg subtitutes.I hope the site's useful for you.

Thank you everyone. I hadn't even thought of banana cake so will give that a go for sure and will try out the others too.

Its annoying as I do cook a lot from scratch (particularly for my son) so I can avoid egg in most main meals quite easily, but it seems to be in a hell of a lot of baked goods and I like making things for the rest of the family to eat. He's at that age though where he wants whetever you are eating so I can't just bake something eggless for him and something with egg for everyone else as he will almost certainly want mine instead!
