Fizzing French Beans!!!

Popping over from the Prepping thread where we have, in the past, discussed salting vegetables as a way of preserving them instead of freezing (in the event of a power outage, freezer will be useless).
I have started a very large Kilner jar of salted beans and am adding daily to the jar as and when I pick.
However, I have just opened the jar to add today's harvest and the beans are audibly 'fizzing' as if they are fermenting! Is that supposed to happen or am I in the process of discovering a new country wine?
