any ideas?
I've heard of cookie roll that can be wrapped in greaseproof paper and stored in the freezer until ready to bake, anyone know that recipe?

The easiest biscuit recipe to remember IMO is the three two one biscuit.
3 parts flour, 2 parts butter, 1 part sugar. You can add some flavouring, some vanilla, or some spice.
They are so simple I never freeze them.
Lots of biscuit recipes can be frozen in rolls and sliced of and baked when ever. Dozens, or even hundreds! Its too huge a question to ask because any biscuit you fancy or like can be waiting for you, not one recipe! Google might be a better vehicle for that question tbh, But for any quick biscuit, the three two one, can be adapted to give you a tiny batch if that's all you need. About 15o for badly any time , eight minutes?0 -
I use the same proportions as lostinrates, but add in 50g chopped up plain cooking chocolate as well.
I've never frozen them because they don't last that long but the recipes all say to portion the dough before freezing, i.e. open freeze until solid then bag up in batches.I'm an adult and I can eat whatever I want whenever I want and I wish someone would take this power from me.

321 - I like that, just the thing I'm after.
got a sponge cake / wee bun recipe yesterday - equal 4 - equal measures of egg, self raising flour, butter and sugar.
I know what I'll be at tomorrow(getting slightly fatter!)

I use the 321 recipe too, adding a good spot of ground ginger, the kiddies love cutting shapes out of the dough (and eating it raw the little monkeys).
Never frozen it though - tend to make small batches.Bossymoo
