christmas pudding recipe which incluses grated carrots

Hi,
I had a great recipe for a pudding which used grated carrots and it was gorgeous.I made two- boiled one for hrs in a pan and did the other in a microwave.No difference save several hours! Can anyone help?

I don't the book with me (I'm away at uni) but there's a recipe in the Roux brothers book 'Patisserie' which has grated carrots in it and it's a brilliant recipe. I've seen copies of the book in second-hand shops for a couple of pounds.0
