Summer meals, pre-preparable, cheap, no indoor cooking...

Looking for more ideas. We're a family of 5 (4eaters) - 2adults, 5yr old and 2yr old. The kids have big appetites so we probably need 3.5adult portions per meal. The kids also have a good palate and will eat most things but rice the 5yr old is better on veg than meat where as the 2yr old avoids green and goes for protein. We also have a 7 week old baby, the kids at home all day & hubby works long hours. We live in Spain so I prefer not to use the oven or job for long as the house doesn't need extra heat. Most cooking is grilled/fried on flat plate on BBQ at the moment.
I can batch cook/prepare one morning at the weekend if I heat up the house then it's less of an issue but I would like to be able to microwave what I make.
Evening meals need to be quick at the time of eating as that is crazy hour in our house!
Currently for the last few weeks we've had chicken breast (I pre marinate and freeze in slices), cod (surprisingly cheap here), pork lion all BBQ'd and served with either couscous salad, home made chips (actifry machine on balcony) or jacket potato (pre cook and microwave when needed). Lunches are bread & ham/cheese/baked beans or ready made tortilla (Spanish omelette) & salad.
Any more ideas - the ones we have work well but I'm getting bored!

I think a wonderbag would be really useful for you; most people use it so that they can reduce fuel usage but it would also allow you to cook for 10 minutes and then let the meal cook fuel-less for the rest of the day.
