bulk bought discount food - now what?

Hi,

Following on from my other thread - I've been and bought tupperware type boxes from the £1 shop, on way home nipped into Mr T's (with a list etc!)

There was loads of reduced food for 10p... So I stocked up. But now not sure what to do!!!

I have:

Desiree potatoes
2 Swedes
Parsnips
2 nags of carrots
2 boxes of grapes
Box of strawberries
2 boxes of blueberries
Box of raspberries

I've also got these but put them in freezer:
Corn on cob
Veg soup mix
Hot dog rolls

What do I do with ^^^?

    If it's short dated and/or you don't think you'll use it, you can freeze most (if not all) of your list.

    I have frozen raspberries in the freezer from the reduced shelf - OH has this with oats & bio yoghurt for breakfast, they just need defrosting. You could use them in baking, to make a smoothie, etc. too, basically you'll lose some texture but still have the flavour. I'd spread them on a baking tray to open freeze, before bagging up or putting in a tupperware container, that way you can grab as many as you need rather than having to defrost a whole tub.

    Grapes apparently go really sweet when frozen - I've seen it recommended as a healthier sweet treat for when dieting.

    The swedes, parsnips and carrots could all likely be blanched and frozen - but just doublecheck (Google should come up trumps)

    I freeze potatoes, but tend to 'process' them first. This may mean par-boiling and freezing in wedges/chips or roast potatoes, or you could cook, mash & freeze the mash - make slightly stiffer than usual as it can go a bit more runny when microwaved.

    The potatoes can be frozen as mash or chips. (Blanche the chips)
    The swedes will last for ever in the fridge (well, I have never had one go off) and the carrots last for a good while too, but you could use them with the parsnips to make a vegetable soup with barley, lentils, dried peas, chickpeas... whatever you have, and you can freeze some of it.

    The strawberries, blueberries and raspberries can be turned into jam, and grapes last a few days in a waldorf salad (celery apple walnuts grapes in yoghurt)
    Grapes are quite nice frozen too.

    I got some yellow sticker strawberries today and I've made them into strawberry cereal for breakfast.

    Chop up the strawberries (you could add the raspberries as well)
    Melt some butter in a pan and add in enough porridge oats to soak up the butter. Add a little sugar and some honey or golden syrup
    Pour this mix over the fruit
    Roast in the oven at 180 for 20mins

    Let it cool and then portion it into bowls. I'm going to have mine with some natural yoghurt on top.

    The strawberries can be frozen. Although they'll break down in the process of defrosting, if you heat them up with some jam & water, this mix can then (with sherry added) be poured over & mixed into dry sponge, as a jelly-free base for a trifle. Elbows that jolt suddenly during the pouring of sherry, add to the authenticity when I try to make "Triflelikemygran's".

    I also recommend double bagging bread products to protect against freezer burn, and any drying out/staleness during defrost.

    I'd use some of the carrots and the swedes to make carrot and swede mash to freeze.
  • You can freeze most, if not all, of this! Like others have said, bung in the freezer or part cook the veg and then freeze.

    Lucky you getting such bargains!

  • Hi again!

    I've been a busy little bee.

    The carrots and Swede are still in the fridge, the grapes are nearly eaten, as are the strawberries. The blueberries have been open freezer and then put into portions in the freezer. I haven't done anything with the potatoes yet

    When I'm cooking - for example we had Swede mash last night, I cooked extra and put the extra in the freezer

    Use the potatoes and root vegetables, with added onion, beef and stock to make a brown stew (called lobby in my area), as the weather has gone a little cooler.
