Koftas and Kebabs

Hi all,
I am having a bbq party and going to make chicken kebabs but am wondering how to bulk them out. I thought of peppers and courgettes on the skewers also but that's a big boring. Mushrooms never work (well not for me). Would pineapple chunks for a bit of sweetness be ok? It also needs to be cheap as loads of guests and not loads of money.
Likewise with koftas. How do I make them cheap and easy?

Personally I like pineapple a lot but I'm not sure I'd want it on a chicken kebab skewer especially with courgette etc.
I'd probably do fresh tomato - basics cherry ones, courgette, peppers if I could get a good price, onion, possibly butternut squash but it needs parboiling so not if I had loads to do.0 -
I've been doing chicken kebabs with salad in this hot weather, and pop tomato on OH's - cherry, or salad tomatoes quartered. OH says they work well. I'm not a fan of tomato, so have been sticking to pepper and onions - with a marinade on the chicken, I can't say I've found them boring. It's not very original - but if it works, it works!

Google vegetable kebabs (images) for loads of ideas
Sweetcorn, about inch rounds threaded on the skewer, I've not done this before but looks good, maybe easier par boiled first then sliced into rounds & skewered.
Diced aubergine looks like it works well too.
I've never got on to well with mushrooms (due to splitting) it seems they are easier skewered the opposite was to the norm, i.e. side to side as opposed to skewered from the bottom of the stalk. Thinking about it, maybe par microwaving with a tablespoon of water & covered with cling film first may soften them a bit & prevent splitting?
Looks like cauliflower & broccoli can also be skewered (florets) & Haloumi...0 -
My work does and end of year BBQ for staff and they do a veg kebab which I've copied loads of times since which is courgettes, peppers and halloumi marinated in pesto then skewered. All of these cheapest in Aldi I think? The halloumi is £1.65 at the moment and does go a long way.0
