This works as well as any sponge pudding I've had. Obviously you can substitute golden syrup for jam, lemon curd or anything else. If you're greedy like me, 4tbsp of your choose decadence probably isn't enough.
Quick Syrup Sponge Pudding
125 g butter or margarine
4 tbsp golden syrup
90 g caster sugar
2 eggs
125 g self raising flour
1 tsp baking powder
2 tbsp warm water
1. Grease a 1.5 litre pudding basin with a small amount of the margarine. Spoon the syrup into the bowl
2. Cream the remaining butter with the sugar until light and fluffy.
Gradually add the eggs, beating well between each addition.
3. Sift the flour and baking powder together, then fold into the creamed mixture using a large metal spoon. Add enough water to make a soft dropping consistency. Spoon into the pudding basin and level the surface.
4. Cover with a microwave-safe film, leaving a small space to allow air to escape. Microwave on HIGH power for 4 minutes, then remove from the microwave and allow the pudding to stand for 5 minutes, while it continues to cook.
5. Turn the pudding out onto a serving plate. Serve with custard.0
