Lardy cake recipe

Does anyone know a tried and tested lardy cake recipe? I know that it is very sinful cake as it mainly consists of fat... have tasted one at my mum's yesterday and I absolutely loved it!!!:p

    Mmm..... Lardy Cake - now that takes me back a bit ! I come from Wiltshire , but since moving North over thirty years ago, I've never seen it since. Oooh my mouth is watering even now..

    This recipe is from the 1954 Good Housekeeping's Cookery Compendium, everything I've made from it has worked.

    Lardy Cake
    2 lb white bread dough
    6 oz lard or butter
    7 oz sugar
    half to 1 oz caraway seeds or 4 oz currants (optional)
    sugar and water to glaze

    roll dough into an oblong and spread on it half the fat and sugar, covering only top 2/3rds of dough. (if seeds or currants are used sprinkle them over fat and sugar)
    Fold dough into three, bringing bottom third up first (I presume the unfatted etc. third). Seal ends by pressing with rolling pin and give one half turn.

    Roll again into an oblong, spread the top 2/3rds with remaining fat and sugar, fold and turn then roll out to fin into a yorkshire pudding tin, making dough 1 - 1 1/2" thick. Allow to rise and bake in a moderately hot oven - 400F for 3/4 to 1 hour.

    When half cooked the cake may be glazed.

    A sort of cheaty lardy cake can be made with a lump of bread dough. Roll it out and put lumps of lard and raisins/other dried fruit all over it. Fold it over and roll again. Add more lard and roll and fold again. Place in a greased cake tin and bake in a hot oven for about 40 mins.

    The ones we used to have, had a sort of sugary syrup on the top making them quite sticky but scrummy.......I don't think lardy cakes can be fattening tho' do you;) ;)

    Naaah... and if you eat some fruit after it will cancel out the calories in the lardy cake ;)

    Try buttering the tin and sprinkling thickly with sugar before putting the dough in. That should make a sticky finish.
