    Thank you everyone for all the ideas, I love the idea of frittatas that I can make early morning, I have lots of tinned potatoes in the cupboard as well (love how cheap they are) so I'll be trying out all the ideas with them.

    This forum is brilliant for ideas.

    Cheap/tinned potatoes make an easy potato salad without cooking.

    Tin of them - open, drain, cut (or not).
    Add mayo, or salad cream.
    Add anything else you like in spud salad (e.g. chives, slices of onion)
    Bob's your uncle.

    And don't forget coleslaw

    White, or red, or both, cabbage. Shredded/grated
    Carrots grated
    Mix. Add mayo.
    Done

    Can also add any/none/all of: bits of (tinned) mandarin, bits of (tinned) pineapple, sulatans, grated chilli.

    Tuna is not vegetarian neither is parmesan cheese.

    Coleslaw, Florida salad, Quorn slices (Ham, Chicken, Beef style)( I mix these torn up into Coleslaw sometimes). Quorn cocktail sausages don't need to be cooked. Crackers and various vegetarian cheeses with pickle, tomato relish, some grapes. Breadsticks and cream cheese. Oatcakes and cheese and pickle/cream cheese. Fruit salad. Cold Quorn mini sausage rolls.
    Vegetarian's Do Not!!!! eat fish :mad:

    I totally second the posters about cheap tinned potatoes, I can't do potato salad any other way to be honest! They take a few seconds to hear in microwave if you do need them got but can be used cold straight from tin.

    The biggest tip I have is in respect of the salad veg. Get it all washed properly leave the lettuce leaves and celery in the water to crisp up. Then using Milton sterilising fluid (30ml in 5l water) dunk all veg in for 2 minutes max. Rinse and dry thoroughly. Put the celery sticks in a glass of water to keep them fresh.

    I promise you it will increase the shelf life of them without any taint. You might want to consider buying a living lettuce, divide it out of the pot into fresh soil and cut it back as needed. Also put any spring onions into water, the tops will continue to grow for you to cut back and use.

    I like the living lettuces I can normally keep them going quite a few weeks and if I can......:)

    I like pizzas in the summer. We are having florentina pizza tomorrow (eggs, goat cheese but putting the spinach leaves on raw) that might be a veggie option for you. The other pizza we're having is a raw pizza, just olive oil and herbs on the pizza base and bake until cooked, then add cold fresh sliced tomatoes, rocket (although we'll be using up the spinach rather than using rocket), parma ham, parmesan shavings and a drizzle of olive oil. I know you're veggie so parma ham and parmesan are out but I'm sure you could do a variation on the theme with some alternative cheese (and maybe some veg) it's still nice even without the ham. Tomato, mozzerella and basil pizza is nice in the summer too and I'm rather fond of a mushroom pizza in hot weather. Corgettes are in season at the moment and are nice on a pizza.

    Other than that it's salads, pastas. Pasta salads are nice for a change.

    Beetroot, feta, red onion and walnut salad.
    Couscous with chopped tomato cucumber and feta.
    Waldorf salad.
    Cheese and pineapple.
    Pasta, Edam, walnut and apple mixed with mayo.
    Cold jacket pots
    Cold potato mashed with spring onion with boiled eggs.
    Potato salad with baby already cooked quorn sausages.
    Quinwa salads.
    I love cold vege samosas. Only way to eat them.
    Crudites with cottage cheese
