Vegan buffet ideas

Hello 
I am having a party and one of my fabulous guests to be is vegan and I want to make sure that he has plenty of tasty things to nibble on. Hopefully there will be a couple of big bowls of tasty things and then lots of smaller nobles to choose from.

How about some interesting and substantial salads - eg -
- mushrooms a la greque
- A chickpea and/or bean salad, with chickpeas, olive oil, chopped tomatoes and onions, and fresh herbs
Bruschetta with olive oil, tomato and olives
Those jars of antipasti from aldi and lidl are good too - artichoke hearts, grilled peppers etc (lidl does some with grilled courgettes and aubergines too)
Hoummous and breadsticks/carrot sticks/crusty bread
An easy and tasty dish is a load of roasted mediterranean vegetables - I use courgette (thickly sliced), onions (sliced into wedges), tomatoes (halved or quartered), peppers (de seeded and sliced into wedges), drizzle with olive oil, and roast in quite a hot oven until the edges are browned and the veggies are tender.
However, one thing to be aware of is that all of these will also go down well with the meat eaters, so make plenty!0 -

One big warning - make enough vegan food to allow your veggies and meat-eaters to snaffle it.
At my friend's wedding a desparate plea went up, "please would the veggies and meat eaters NOT snaffle the vegan and fruitarian dishes". The caterers had made enough of each for the guests but not allowed for the fact that people graze down the food scales.
In fact they often use the opportunity to experiment a bit.If you've have not made a mistake, you've made nothing0 -
I've made Hugh Fearnley-Whittingstall's Cambodian Wedding Day Dip substituting peanut butter for crushed peanuts and a little more of the 'moist' ingredients, you can get peanut butter substitute but I'm not sure where. It's lovely and so tasty on crackers. This is another dish that meat eaters will yum up too.:money:0

She does a lot of veggie/vegan meals and I think there are some that could be adapted for a buffet such as the Carrot, cumin and kidney bean burgers - I've made these as smaller 'meatballs'/fritters and they're lovely with sweet chilli jam.
The Sunshine bread is delicious, and i'm sure it's vegan if I remember right.
How about:
Flour tortillas can be vegan (check the label) - you could make pinwheels with guacamole and veggies/salad.
Dolmades (vine leaves) or cabbage leaf parcels filled with rice, mushrooms, etc are lovely if made dainty (I make them with bacon but that can easily be subbed!)
Salads with lentils/chickpeas/nuts
Cous-cous, quinoa, bulgar wheat all make good salads.
Roasted sweet potato or thin slice and make vegetable crisps.
I'd recommend that you have a separate platter for your vegan friend or give him first dibs at the buffet so that everyone else doesn't nab all of the interesting, tasty looking food!"Does it spark joy?" - Marie Kondo

When daughter #3 went through her vegan years, I used to make vegan potato salad - cook and cool baby salad potatoes, squeeze over enough vegan mayo to cover, then chop spring onions very small and mix in.
Suma foods are a good bet - they make it clear on the pack if food is suitable for vegans so you can't go wrong.No longer a spouse, or trailing, but MSE won't allow me to change my username...0 -

Peanut butter is vegan, well I've never seen any that wasn't.

I agree with trailingspouse about using baby new potatoes, they are delicious served cold with maybe some tomatoes which have been roasted with garlic and a little sugar.
If it was a hot buffet I would love ordinary roasted potatoes which have been done with olive oil, sea salt, garlic and thyme.0
