Mortgage in Principle - can we move bank?

Hi all
We (husband and myself) obtained a mortgage in principle from our bank. We've now sold our property and have had an offer accepted for another but we have a completion date of 15th August (just over 3 weeks!). All solicitors are happy with this and bank said they could do it... except the mortgage advisor only comes to our town once a week, is fully booked this week then goes on 2 weeks holiday with no one covering! They expect us to wait which we clearly can't do as the buyer of our property is very time-dependent.
They are also telling us because we started the process in-branch we now can't change to online application.
I wondered if we'd be penalised for starting the entire process again online including the mortgage in principle even though the one we have doesn't run out for a few more weeks yet.
Any ideas what we can do?
We are in Scotland (just in case it makes a difference!).
