I have noticed that if I save half a tin of (usually value brand) rice pudding until the next day it goes very liquid, however much I stir it up before removing the first half. This also happens if I heat the whole amount and then leave some to cool. It has happened with both Tesco and Asda brands.
Yesterday I opened a tin of Mahatva brand kheer (Indian rice pudding) which was lovely and thick and a bit of a treat. I left half a tin overnight in the fridge and today it is grains of rice in liquid. I've heated it - no change- allowed it to cool again - no change - it's still grains in liquid.
the only other time i've come accross this was when i got some add boiling water custard powder - when cold this went liquid however thick I made it to start with.
Does any one know what is happening and how I can stop it?

It's never happened to me ... I buy the cheapo tins, but I'd never leave food in a tin. I always decant it into a lidded plastic storage pot.0

Hello Seakay. Sounds like it might have something to do with the air getting to it? I would not leave a half tin in the fridge, it is not good.
can you not eat a whole tin instead of a meal?
If you have a half tin to save put it in a lock and lock box.

Would the other half of the rice pudding go into the freezer straight from the tin before being heated? theoretically it should come out the same consistency as it goes in, I 've not tried this but it might be worth a go if it's going to separate out in the fridge anyway?0

will certainly give it a go. the separation is not the sort you get when milk curdles, it's as though it never thickened or as though the rice never absorbed the milk in the recipe
The rice pudding kept last night had not been heated at all because kheer can be eaten hot or cold and I had it cold0 -

The most recent example was in the tin, I have previously stored it in a bowl covered in cling film, in a tupperware with a sealed lid and the custard was in a glass jug which was never covered because liquefaction happened as soon as it cooled so I threw it out.0 -
Do you stir the WHOLE tin before you serve the first portion?
My OH loves his tinned rice pud & I often find the lower part of the tin is more fluid - as if the rice rises once the pudding is canned. Stiiring it first might alleviate the issue (can't say I've checked the leftovers - he's always eaten it before I get to look!).:mad: :j:D:beer::eek::A:p:rotfl::cool::):(:T0 -

yes I always give it a really good mix - usually I turn out the whole tin and mix it well before serving some and putting the rest into a covered bowl or tupperware to store in the fridge.
Yesterday I mixed it out of the tin before putting half back and covering and putting it in the fridge0
