I read there are 2 tax return forms one short the other long and more in depth and assumed that people under a certain threshold got the short one due to simpler tax affairs.
However I've just read that everyone does the long one and only certain people receive the short version.
Is this true?

Once you opt to submit online, these paper forms become irrelevant.
HMRC would like everyone to file online, and just about everyone who does do would never go back to paper.Who having known the diamond will concern himself with glass?

The procedure starts with asking a lot of Yes/No questions. These are for different types of taxable income.
The more Yeses you tick, the more sections you need to fill in.
If you are self employed, it will ask if your income is over a certain amount - around £70k. If under, they just ask for totals not itemised breakdowns.
So everything depends on how many different sources of income you have.Who having known the diamond will concern himself with glass?
