Vegetarian & vegan cook books recommendations

I'm a confirmed carnivore but I would like to eat more pulses, beans & lentils - in the interests of healthy (low cal) eating.
Has anyone got any recommendations?
Pulse looks good (but only saw on amazon so not inside - a reviewer recommended the 7 veg tagine, I like the sound of that!).
Or HFW River Cottage Veg Everyday?
I'll admit I've never looked at veggie cookbooks before.

depends how many people you are cooking for and how fancy you like to cook, I think! I have a range from huge elaborate xmas efforts to single vegan student.
Although I'd start at the supercook website for beginning!2021 GC £1365.71/ £24000 -

Mainly for one, but I have no problem eating the remainder the next night.
It's cooking after a days work rather than fancy dinner party stuff.0 -

Not much idea on veggie cookbooks although I've got the Jack Munroe one out the library at the moment and that seems to have a large proportion of veggie recipes, might be good if on a budget.
My usual tactic with cook books is to get them out of the library first to see if I will use them before parting with any cash so if I were you I might nip down to the local library and see what they've got. Luckily my local library let you order books from other libraries in the county for free so nearly everything that I find recommended I can check out first. Saves me wasting money.
I also enjoy a good browse in the bookshops - lets you find out what might be available, then order it from the library to see if it's any good.
What sort of recipes are you after? I like simple ones with not many ingredients which don't take too much effort to cook but you may prefer something fancier. Many people seem to recommend a good Indian cook book if you like spicy food as they tend to have many veggie recipes in.
Sorry - just seen that you've already posted the answer to this while I was typing!
Just ordered the River Cottage Veg book from the local library so thanks for the suggestion. I'll see what it's like.2024 Fashion on the Ration - 3.5/66.5 coupons remaining1 cardigan - 5 coupons13 prs ankle socks - 13 coupons5 prs leggings - 10 coupons4 prs dungarees - 24 coupons1 cord jacket - 11 couponstotal 63 coupons0 -
Pulse is amazing and the recipes work. My preferred vegan cookbook writer is LINDA MAJSLIK who has published regional vegan recipes from all round the globe and I've never made anything that didn't taste delicious. We're not vegetarian or vegan but we like pulses and vegetable based dishes for thier own sake.0

Just had a look at a girl called jack again, I bought it when it first come out. I dismissed all the veggie recipes because I wasn't interested in them.
They are perfect, they are all fairly stripped down minimum ingredients & perfect for quick cooking after a long day.
I may buy pulse too.0 -
River Cottage veg every day and Plenty by Yotam Ottolenghi are the 2 I use the most, but I also like Nigel Slater's stuff; I just change the recipes that have meat in and substitute veggie alternatives - sausages, quorn, veggie mince, chickpeas, veggie burgers or just leave the meat out.0

The internet has a huge resource of recipes. No cook books needed.0
