All sound good ideas but what about chicken Fateas (sp) leave chicken mix in a bowl and serve with the tortilla wraps, guaemole, salsa sour cream so everyone can join in and help themselves then serve with nachoes topped with grated cheese, salsa and sour cream cook for few mins and perhaps home made wedges

Feb Grocery Challenge £2500 -
we had friends round last Saturday for a supposed BBQ, and ended up doing this instead:
Stuffed chicken wrapped in parma ham
1 x chicken breast per person, bashed thin between 2 sheets of cling film OR you could use boned chicken thighs instead.
Make a stuffing by adding shelled pistachios and seasoning (parsley, tabasco, S&P, garlic, whatever you like) and place inside the chicken.
Roll it up, then wrap in parma ham or streaky bacon
Wrap the whole thing tightly in cling film like a cracker and poach for 20-25 minutes in water. You can do all of this well in advance & leave in the fridge.
When you're ready to serve, unwrap the chicken parcels and pan fry until they are heated through and the bacon crispy. Serve in 3-4 chunky slices.
I did it with roast potatoes, creamed cabbage with bacon and oven baked baby carrots with orange & poppy seeds. Delish & all very easy, most of it looked after itself in the oven.0 -

I think I'd get courgettes, aubergines and peppers and grill or griddle them (season and brush with a little olive oil, mashed garlic and parsley). These can be prepared in advance and eaten hot, warm or cold. With these I'd serve some tasiki (cucumber and mint in yogurt), hummus (mashed chickpea with sesame paste) and either some chicken or lamb cooked on skewers. A pile of pitta bread and a nice mixed salad.
At this time of the year I find this goes down much better than heavy casseroles or pasta meals and can be served to meat eaters and vegetarians alike. Also, almost everything but the meat is done in advance. (And even that can be if you prefer - but it's not quite as nice).0 -

No parma ham or pistachios in Hicksville, where I liveSo used bacon and the stuffing is almond, walnut and cashew, orange zest, oregano and mint from the garden. I'm going to make a gravy with the orange juice. It's looking (and smelling) yummy :drool: :drool: :drool: Serving with HG new potatoes, carrots, beans and mange tout.

Stuffing sounds lovely, glad it all went well, hope our lunch party tomorrow is as successful. We've decided to eat in the dining room instead of on the terrace, as yesterday afternoon the temperature even in the shade was well over 90f0
