Job change before mortgage completion?

Hi,
Just looking for a little advice. I know no-one can probably say for definite but just wondered if anyone has had a similar situation recently?
I am buying a new build flat that is due to be finished end of August 2014. I have exchanged contracts already, but this week I have been offered a new job.
The new job is for a different company and will be a pay rise of about £2.5k gross per year (doesn't sound much to some, but I currently only earn £16.5k!!). It is in the same industry, same job role, just slightly different end product.
I have to give 1 months notice in my current job, but my new employer is happy to wait for me to start until mid-September. That would mean I would have to give notice of my current job at the middle of August. So about 2 weeks before I am due to complete. (But obviously as it is a new build, that completion date could be delayed if the builders don't finish it on time!)
I guess what I want to know is if the lender will do any checks on my employer just prior to completion?
I know I should technically tell my lender of my change in circumstance, but I've had such a nightmare with solicitors etc for other aspects of the buying process already, so I really don't want to rock the boat further. I know its a game of risk not informing them, but how likely are they to find out I have given notice and will be changing employer so close to the completion date?
Has anyone else had experience of a similar situation recently?

tough decision, one i was in earlier this year BUT i hadn't exchanged contracts. I told my lender and it was fine in the end... days of waiting for a decision though after it went to underwriters.
i don't know what you should do. Did you have a mortgage broker? Ours was the best in helping us with a similar situation.
remember if they did find our before completion you could potentially lose your deposit.0
