Separating them out into parts won't really help either as the watch strap parts have a duty rate of 6%, and the actual mechanism remains at 4.7%.
You can ask UPS to use any code you like - the legal responsibility for the accuracy of the declaration rests with you as the importer, and there are penalties for making a false declaration0 -

You could liaise with HMRC to reclassify the goods as craft kit/toys (as per above link).
The duty rate is still 4.7% but that is what you had concluded previously anyway, although I think you'd have a better chance of arguing it is a craft kit/toy rather than an alarm clock or a watch.
You need to speak to HMRC and request a BTI (Binding Tariff Informaation) so that future shipments can use the proper duty code.

Have you asked for the clearanve breadown of cists from ups.
As i said before if zero is declared for shipping a dwfaukt value will be used and applied on which you will pay the vat element of. It is much better for the shipper to declare a shipping cost.0 -
