employer wants to exploit me, help!

I had an offer from an employer in the hospitality sector, and I can not turn it down as I need the job badly.
I have been off work for about two months, and I had applied for about 20-30 jobs during that period to no avail.
I have been contacted by the new owner of my previous work place,
they offered me a a certain amount of hours a week at almost half the going rate for the position and knowingly WAY under the national minimum wage.
however the amount of hours is 50-60 a week so when i do the math I cant turn down that offer.
I know the employer is exploiting me by this offer, but I also need the money.
they will fiddle the wage slip so it shows I worked only the amount of hours that correspond to the money they will give me
i.e if I work 50 hours at £5 (=£250) they will put in the wage slip that i worked 40H (250/6.31). and thus I end up working 10 hours for free. (or 20 hours free considering the actual going rate for the position)
I will be still paying my tax and national insurance on my earned money so I wont be doing anything wrong.
what should I do?
I feel so angry that these people can get away with this...but I'm torn as I need the money.
is there anyway to accept the job then collect evidence of underpayment?
Im so confuse, one may say why you want to take the job at the first place if you want to collect evidence and make troubles?
the short answer, I dont know... one part of me wants the money, and the other part does not want these people to get away with exploiting and almost enslaving others!
any thoughts...please?

If the wage slip states that you've worked say 40 hrs how will you prove that you worked 50 hours?2014 Target;

I dont know.. maybe prove that in the given hours every week I was present on the premises on cctv cameras or through staff witness..I really dont know0

who said you were pathatic? No-one ......and for the record yes I do think the employers should be reported.
I'm just asking how would you prove it?
