We're trying to finally get it together to start freezing meals, so I have a question about Chicken Tonight.
If I fry my sliced chicken breasts, add my jar of Chicken Tonight mushroom sauce and some chopped mushrooms then cook it as usual, will that freeze alright? I'm guessing all I do is let it cool, then bung it in an empty icecream container or whatever and lose it in the freezer?
And if it does freeze OK, does it reheat alright in a pan on low heat on the hob (we don't have a microwave)?

Hello, i hate to say this but I would not be freezing chicken I had cooked at home. there is something about chicken you have to be careful with food poisoning. Chicken, I would cook the once and any left eat cold the next day.
Beef and pork, I casserole and sometimes freeze half.
May be it is just me....
If you are slicing the chicken, is it cooked? then you are heating again to add sauce?If so I am getting worried!

I always freeze chicken casseroles and curry's where I have cooked the chicken at home, no food poisoning yet!
Just make sure it is cold when it goes into the freezer and reheated right through by defrosting it and heating it in the pan.

Hi, what I would do and its perfectly safe to do so, is cook a whole chicken, then slice off the meat into portion and freeze the meat. Then say if you want the chicken tonight meal tommorow, sunday. Take a portion of frozen chicken out tonight and leave in the fridge to defrost.
Then tommorow tea time put the already cooked chicken into a oven proof dish put anything else in, mushrooms etc and pour over the sauce and pop in the oven to re heat which in my oven would be gas mk 6 for 30 minutes.
You can do exactly the same with a jar of curry sauce to make chicken curry. I do this often in the winter months. I have tried making curry from scratch but it smells nice but tastes of nothing so I use the jars.0 -
The problem is not the freezing but the defrosting.
Lots of dishes actually improve with freezing, especially curry.
I dont eat meat, so any casseroles, currys or stews I make for my husband always creates extra portions, these go into the freezer and are either defrosted overnight in the fridge or microwaved from frozen. No ill effects at all.
Most casserole recipes will say if they are suitable for freezing, but theres some good advice on this website.

To be honest I would be more bothered about the mushrooms as they go a little bit rubbery on freezing, but thats a personal preference.0 -

Chicken is perfectly safe to be reheated as long as it is cooked through, no blood.
To the op. Tbh I wouldn't fluff about freezing a chicken tonight meal, it's not really going to take much time from start anyway
What I would do for an easier life is to poach the chicken in a pan of seasoned water ( oven or hob) and freeze that ready to use when you need it
Mushrooms are horrible when they have been frozen as already said
You can buy bags of frozen sliced or diced onions as well. Very handy0 -
