frozen cream

hello! I have 6 x large pots of frozen double cream, out of date by 8 days. it's all still frozen in the freezer, what can I do with it? was thinking maybe replace the coconut milk in curries , but that's all the ides I have

Ice cream? Freeze some bananas and blend the frozen cream with them....
Soups? Chowders etc...0 -
Quiche.
That'd use up 4 fl oz defrosted cream.
I make a pastry base (I know some folks do pastryless quiche, too) and put in tomato, diced onion, Qu0rn chicken-style pieces (you can use bacon if you're a meat-eater) grated cheese (I use extra, extra mature Cheddar) and fresh basil from the pot on the windowsill.
For the quiche mix, I use 4 fl oz double cream, 2 eggs and a good dose of black pepper. Whisk together, pour over the stuff in the pastry base, bake at 180 C for 45 mins.If your dog thinks you're the best, don't seek a second opinion.;)0 -
I would make a desert with it - lemon posset where the cream is cooked with sugar and lemon then chilled, I top mine with raspberries and serve with shortbread biscuits.0

Use in white sauces eg white wine sauce, pie filling etc
Defrost and whip it to use on top of banoffee pie or with any other desserts
