Thank you for the many delicious sounding suggestions, I will definitely be trying some of them out.
Day 1 of the challenge and I have the following for lunch:
Leftover roast chicken with sage and onion stuffing, broad beans and carrots. Pasta salad dressed with olive oil, black pepper and parmesan.

Yes I really did enjoy yesterday's lunch, it was yummy!
On the menu for today is home made celeriac and stilton soup with home made wholemeal bread. Blueberries and strawberries for pudding.
I managed to find a bread recipe that is really quick and requires no kneading and the bread is lovely, although I think I need bigger loaf tins as it escaped a bit at the top!

Im into sprouted seeds and beans at the moment and these pep up simple sandwiches and salads. My fave salad at the moment is a selection of sprouts with cubes of feta and a couple of olives. Also, on the subject of sandwich bags, I got concerned about "plastic wrappings" for foodstuffs a while ago (especially for the kids sandwiches) so I bought a huge pile of paper sandwich bags from Makro and these have lasted forever!!!! They work out really cheap are are a bit more environmentally friendly than the old plastic ones.0

I can t eat wheat and I came across this recipe for packed lunches that arent sandwiches : in a plastic box put:
some whole wheat pasta or rice
some cooked beans
something green - veg or salad
some protein - cheese, ham, cooked chicken, tuna, etc.
add dressing - fantastic - and you can add anything else you fancy of course.

My favourite lunch which I take to work nearly every day is a sachet of flavoured couscous with a boiled egg on top, I started doing it when I was on slimming world and like it so much I still have it now! Even nicer with a pot of McDs bbq sauce mixed in.0

Well I did try and post yesterday but it doesn't seem to have come up, I was having computer problems at the time. :rolleyes:
Yesterday was a day off from the challenge as work took us out for lunch and very nice it was too!
Today I have the last of the celeriac and stilton soup with HM bread followed by blueberries and strawberries.
Watch this space next week as I have bought myself a bento book and am planning on turning Japanese at lunchtime for at least part of the week!

My lunch today is a baked potato. I bake a pack of them at a time in the oven (as I prefer them that way). Then freeze them and just defrost overnight and take to work with a pot of something (tuna sweetcorn today but monday's was beans)working on clearing the clutterDo I want the stuff or the space?0
