Whether or not the employer recognises a particular union is an irrelevancy. You always can join the relevant union and that should be one of the first things for you to do in the next job.

This certainly does not sound like constructive dismissal. If you think about it logically has someone targeted you alone and personally making your life so unbearable that you have no choice but to resign? It sounds like everyone has been treated the same. Just because you can't handle it doesn't mean it's grounds for constructive dismissal. You should start by raising a grievance.0

Why are you reading the emails sent late at night? Are you reading them then, so you're still working at that time, or (more sensibly) at a reasonable time. Just because your manager chooses to work silly hours doesn't mean you have to.0

As a large organisation your company is very likely to have grievance procedures.
In order to even have a chance at tribunal you will need to demonstrate that you have done all you can to resolve the issues using available processes.
How about:
1. Asking for an Occupational Health assessment so that you can talk about your stress? You are developing a medical condition that will need to be managed. Your current thoughts may be influenced by your state of mind... don't make any hasty decisions.
2. Putting in a formal grievance? Your company is likely to have a 'fair treatment' or similar policy. Look at it and then formally raise your issues.
3. Are there others that are also unhappy with the treatment? How are they addressing it?:hello:0 -

I went to speak to the manager today who of course denied everything and became ultra defensive, said he would put me down as leaving without giving notice yet I offered to work my notice. He also called me a "drama queen" and "idiot". I will be pursuing a grievance with the HR department immediately
Around an hour later I was sent an email offering me another role or another store and he was there for me etc.0 -
Well, what he's written down sounds helpful, reasonable and constructive. You need to reply in a similar vein. Might a new role, in a new store be a good option?Reason for edit? Can spell, can't type!0

OP you mention things about personal things being stolen, have you suggested lockers for the staff ?
You also mention about emails being sent late at night do you have to actually read the emails or even reply to them.0
