current santander mortgage customer

We currently have a mortgage with santander 50% repayment and 50% interest only on there svr of 4.74%, we gave them a call earlier to see what fixed rates are available. We decided to see if we could add more to the repayment side to get the amount down, thought it would just be a case of switching but no, they are emailing over budget sheets that we need to complete, problem is my husband has his own business and takes dividends which he can prove earnings from accountant but its not your straight forward wage slips etc, my question is what if they say no to the fix? can they demand we pay our mortgage back or would we just have to stay on svr?
