can't remember employment history dates!

I only list my last five years worked, I definitely wouldn't list more than 10 years work history (unless one of my previous jobs overlapped the time scale).
Some technical jobs require you to have 10+ years experience and so it's best to be able to go further back but agree that when I hire a senior PM I am not interested in the Saturday job he had as a teenager.
To the op, employers like to see dates to look for gaps in employment. Someone who routinely struggles to find work between jobs is a warning sign. Be accurate as possible on the recent jobs and revert to years only on the older ones0
