Hello everyone, this is my first thread on the OS board
I've got 3 weeks left of my final year at uni. I'm a bit of a food hoarder (I take after my mum!) so I'm left with a freezer/cupboard full of stuff to eat and not much time to eat it!
Can anybody help me think of a meal plan for this lot? There's only me I need to cook for.
I don't have a lot of money but can buy basics if really needed but would like to make things from what I've got. I'm after lunch and dinner ideas really or puds/cakes etc.
Here goes!
fresh fruit & veg:
Punnet of kiwis
2 (very) ripe bananas
2 avacados
stewed apples
spring onions
lettuce
onions
bag of potatoes
broccoli
carrot sticks
Cupboard:
croutons
desicated coconut
risotto rice
marmite
worcestershire sauce
mixed herbs
pepper/pepper corns
cocoa powder
gravy granules
veg/beef/chicken stock cubes
ground cumin
ground coriander
oregano
ground ginger
korma curry powder
paprika
dried parsley
Garam masalla
fenugreek seeds
tumeric
1/2 pack dry stuffing mix
sunflower seeds
2 x tins anchovy in oil
1 x tin chopped tomatoes
casear dressing
balsamic vinegar
extra virgin olive oil
honey
ketchup
chopped dates
blanched hazelnuts
2 x tinned peaches
red lentils
brown rice
pasta
oats
strong wholemeal flower
yeast
plain flower
1 x tin of 5 bean salad
Fridge:
seeded mustard
branston pickle
strawberry jam
apricot jam
nandos peri sauce
sweet chili sauce
comte (french cheese)
2 eggs
2 x duck breasts
Freezer:
sausages
quorn spag bol (1 and a half portions)
bacon
parmasan
mozzerrella
3 x salmon fillets
4 x free range chicken breast
2 x trout fillet
350g seafood selection pack
250g prawns
1 x pizza base
fresh ginger
feta cheese
chopped chillies
peas
bread crumbs.
Phew! Thanks in advance guys!

Could you make a chicken, mozzerella and herb pizza by grilling the chicken, reducing half of the chopped tomatoes with the oregano, and then using it on the pizza base?
The other half could be used to make a pasta sauce, fry off the onions, add the tomatoes, throw the herbs in and sprinkle with some parmesan.
Also perhaps a pasta and seafood dish, perhaps using the sweet chilli sauce? Salmon and brocolli quiche?Good enough is good enough, and I am more than good enough!:j

Tbh i cant see what food planning/inspiration you need. You have more food there than would last 3 weeks, so theres nothing anyone could add, other than do you fancy chicken gougons or chicken curry tonight.
Your store cupboard has enough spices to produce every flavouring under the sun and plenty of dessert/cakes too
I think most people would be stumped by your Q as we are more used to eeking out foods and being inventive with leftovers on this board, rather than i have a cupboard full of foodstuffs that i have eaten and cooked for the past 9m and have suddenly lost inspiration0 -
I would concentrate on using up your fresh items first. Then your freezer items. I wouldn't worry about your cuboard items they'll be OK whatever. Your freezer items maybe OK but depends how far you've got to transport them and if you are moving back in with Mum who is also hoarding food then you have a problem!
I don't like fish so I can't come up with sensible suggestions for that!
Get your mates round for a feast? - I'm thinking Italian themed with all that cheese and fish. But I'm thinking pizza, rissoto, pasta, home
made ravioli, homemade chilli bread (can't see garlic) You should not buy another thing!! (maybe wine to go with it?).
Alternatively Jambalya/Paella - go tapas style. Lots of little dishes.0 -
Also make a banana and date loaf right now to use those bananas!0

I would make a paella with the risotto rice and seafood and the carrot sticks. Could even add some chicken too. Don't know what seasoning I'd use as my sister in law lives in Spain and often gives me paella seasoning packets (it's called Paellero and can be bought on ebay and amazon for anyone that wants to try it. It's great)0

I'd suggest a fish pie using all of the frozen fish, potatoes, comte, onion, broccoli - you'd only need to buy milk to make a basic cheese/white sauce. Make homemade chicken kievs with the chicken stuffed with mozza/parmasan/bacon covered in your breadcrumbs (that will use the egg and flour as well). The duck can be marinated in honey before being pan fried and eaten with salad and potatoes or some sort of spiced rice or the bean salad. For the tinned anchovies and tomatoes, make a pasta puttanesca : tomato and anchovy pasta with parmasan and breadcrumb topping for example. Make some guacamole and eat it with the carrot sticks.
You have a lot of stuff that can be made into delicious meals. I'd suggest buying NOTHING unless absolutely necessary because you seem to have plenty for 3 weeks.0
