meal plans wc mon 21st april

Hi all. Couldnt see a thread so here we go with a use up and thrifty week for us.

Mon: leftovers and use it up night.
Tue: stir fry chicken n veg with noodles.
Wed: hm calzones n chips.
Thur: sausage mash n veg.
Fri: chicken stuffed with cheese wrapped in bacon.
Sat: hm fish pie
Sun: spaghetti n meatballs.

    stuck to my fridge in readiness for my weekly shop tomorrow:

    dinners:
    1. Roast garlic chicken with rice and peas/sweetcorn ff
    2. Veg soup ff with gruyere cheese croutons + baked apple with saltanas and custard
    3. Chicken salad with new potatoes
    4. Roast pork with all the trimmings ff
    5. Homity pies (frugal queen stylee)
    6. Lamb cobbler from YS lamb ff
    7. Pork stirfry

    Lunches/Breakfasts/Snacks:
    1. Soup from store or ff
    2. Potted Mackerel (HM)
    3. HM flatbread with chicken salad
    4. HM Quiche
    5. Cheese or ham sandwiches
    6. Apples
    7. Bananas
    8. Saltanas
    9. HM flapjacks

    Tonight OH is having a tin of YS minced beef with rice from the cupboard and I'm having LO Stuffing and veg from yesterday's Easter roast. Anything left from that will be frozen for another LO day.

    This week will be a 'use up what we have' menu, and I'm not sure what our plans are so days may change.
    T - Chili with wild rice and garlic bread
    W - Pie and broccoli / cauliflower with gravy
    T - Roast turkey with kale, carrots, cauliflower, roast pots and gravy
    F - Turkey supreme with spaghetti and mange tout
    S - Grilled turkey and avocado wraps
    S - as Sat

    I've made some chicken soup and mushroom pate, so that's lunches for the next few days, with salad and rolls.
    Breakfasts will be toast or potato cakes.

    Mon - chicken and bacon salad, chicken noodle soup
    Tues - roasted vegetable and pesto pasta, chicken stir fry - chili and garlic sauce and noodles
    Wed - pesto pasta and salad with bacon bits, tarragon chicken
    Thurs - cream cheese and peppers bagelsnow bagels with pate and lettuce, toad in the hole with red onion gravynow vegetable chili bean pasta bake
    Fri - fritatta now bagels with pate and lettuce, crepes with mushroom sauce.now meatballs with tomato sauce and spagetti

    Need top up shop for milk and bread but hope to make everything else stretch out this week. Snacks will be remains of Easter eggs, apples, bananas, grapes and sultanas.Have made some changes as forgot I had pate and have run out of flour. Chili beans in spicy tomato sauce were bought a while ago in error so experimenting with them as a base with pasta in cheese sauce as the topping. Have made them healthier by adding grated courgette and carrots. Have made tomato sauce in advance so tomorrow just have to make the meatballs from the sausages in freezer.

    Tues - LO Roast Lamb dinner
    Weds - Pizza & Salad
    Thu - Chicken Stir Fry
    Fri - Sausage Stovies in a giant yorkshire pudding
    Sat - Chicken (marinated), new potatoes & roasted veg
    Sun - Beans & Egg on toast

    **Meals will probably be in different order, depending on work**

    Breakfasts - Ald1 version of Special K & Berries
    Lunches - Bone from leg of lamb being made into a broth for lunches /
    sandwiches/

    Here goes with mine.


    Monday - Rubber chicken curry & Stir-fry noodles


    Tues - Toad in the hole, roasties, peas, sweetcorn & onion gravy


    Wed - HM Burgers, Wedges and salad


    Thurs - Chicken fajitas


    Fri - HM Pizza & Salad


    Sat - To be decided.


    Sun - Roast Chicken


    Mon - HM Chicken Pie, Potatoes & Veggies


    Tue - Pasta Cheese& HM Garlic Bread


    Wed - Sausage, HM chips, Beans & Egg


    Got all meat in freezer so fresh veggies/fruit etc to get and a few other bits.


    Need to make flapjack, cakes etc for pack-ups and snacks. I also want to defrost my larder freezer so need to do a stock check and use up what I can.

    W - Venison Steaks with steamed spuds and veg
    T - Sausage & mash with gravy
    F - Spaghetti carbonara
    S- HM chicken goujons and waffles
    S - Marinated pork chops

    Morning everyone :)
    It is a really tight month for us this month so meals won't be all singing and dancing type :(
    Monday- LO lamb from Sunday dinner as a stirfry
    Tuesday- Chorizo mince with jacket potatoes
    Wednesday- LO lamb curry with turmeric rice and samosas
    Thursday- LO Chorizo mince with LO rice and spring rolls
    Friday- Paella type dish with cooking bacon and hard boiled eggs
    Saturday- HM pizza and garlic bread
    Sunday- Beef dinner with super 6 veg and HM yorkshire puddings
    The LO beef will feature heavily next week

    I'll need to buy eggs, butter, margarine,noodles for lunches, veg and potatoes as we have next to no eggs left and I'm out of potatoes all together :(
    I have my fingers crossed that there will be an Aldi voucher tomorrow so that I can have a good stock up to try to get through the month.

    M - We had roast lamb, ratatouille, roasties and baked Alaska bombe at OHs parents - lovely!
    T - Moroccan chicken w/cous cous
    W - Jack Monroe's chickpea and chorizo burgers, pitta, salad, hummus, tzaziki
    T - Brocolli, and carrot stir fry served with teryaki rib-eye steak and rice noodles - Considering having this instead (thanks gayleygoo) and reserving the steak:

    Brown Sugar Pulled Chicken

    1 kg chicken thighs
    1/2 cup water
    1/2 tsp salt and black pepper
    1 tsp tarragon (although I usually use oregano or whatever I have on hand)

    glaze - mix 1/2 cup water, 1/2 cup brown sugar, 2 tbsp soy sauce, 2 tbsp balsamic vinegar (or cider vinegar if it's all you have), 1 tbsp cornflour.

    Put the chicken thighs in the SC with the water, seasoning and herb. Cook on high for about two and a half hours.
    Mix the glaze ingredients in a saucepan and heat until thickened. Pour this over the chicken in the slow cooker and toss. Cook for another hour on low.
    Remove chicken from slow cooker, pull apart with forks, and serve with rice, noodles, pitta bread or whatever you fancy


    F - Out for dinner
    S - Tuna and sweetcorn burgers w/sweet pot wedges(?) Tuna pasta?
    S - Chicken and chorizo jambalaya

    Breakfasts will be hot cross buns, porridge w/banana, eggs (might make a chorizo frittata at the weekend)
