Chicken ideas please

I've taken a chicken leg/thigh out of the freezer, but I forgot that my oven doesn't work very well. Silly me! Also, stocks are pretty low in the food department as I couldn't face shopping during the Easter rush.
I'd like to do something with the chicken in the slow cooker, but I can't think of a single thing to do with it. I've got an onion, two small potatoes and quite a few carrots. I also have stock pots/cubes and lots of herbs and spices. I'm gluten free and rubbish at baking, so a pie is out of the question, but I'd love ideas and/or recipes as to what to do with my chicken.

What you have already sounds fine to me to throw all in the slow cooker and see what happens. Maybe boil (or shallow fry) the potatoes rather than putting them in the slow cooker might make it a little more interesting.:footie:

You could bung it all in slow cooker with whatever herbs you fancy.
If you've got any pearl barley I find that cery good as a thickener.0 -
Chicken and potato curry? Layer potatoes and onions in the slow cooker, add the chicken and add whichever curry spices you prefer, or use a curry paste to make a sauce. Could add tomatoes, garlic, ginger if you have any.0

Thank you, everyone. I've put carrots, potatoes, an onion and a couple of garlic cloves I found in there, a chicken stock pot (was on special offer a while ago at same price as stock cubes) and some boiling water. Put chicken leg on top, sprinkled mixed herbs, basil and Cajun seasoning on it. Smells lovely

I realise you've made your dinner already, but I wanted to share a favourite recipe for chicken legs. It's cheap and goes in the slow cooker!
Brown Sugar Pulled Chicken
1 kg chicken thighs
1/2 cup water
1/2 tsp salt and black pepper
1 tsp tarragon (although I usually use oregano or whatever I have on hand)
glaze - mix 1/2 cup water, 1/2 cup brown sugar, 2 tbsp soy sauce, 2 tbsp balsamic vinegar (or cider vinegar if it's all you have), 1 tbsp cornflour.
Put the chicken thighs in the SC with the water, seasoning and herb. Cook on high for about two and a half hours.
Mix the glaze ingredients in a saucepan and heat until thickened. Pour this over the chicken in the slow cooker and toss. Cook for another hour on low.
Remove chicken from slow cooker, pull apart with forks, and serve with rice, noodles, pitta bread or whatever you fancy. Very yummy!
