Salmon question

Hi, I cook salmon pretty much every week but this week bought a new ceramic coated non stick griddle pan so needed no oil to cook it in to stop it sticking.. Lots of liquid came out of the salmon, looked like oil rather than fat. What I'm wondering is, is this good stuff or bad stuff coming out? Out of habit I drained it well and blotted on kitchen paper but maybe we should be eating this part too? Or giving to the dogs?

And if you have much coming out perhaps you are over cooking it? You only need to cook it for a brief few minutes xMAY THE ODDS BE EVER IN YOUR FAVOUR0

Where did you buy it? Is it added water, as per chickens, ham, bacon, inject water = more weight, more price per pound, , more profit?Eight out of ten owners who expressed a preference said their cats preferred other peoples gardens0

Thanks, I'm sure I do cook it more than I should but the kids happily eat it so I'm happy with that, they like it a little crispy and cooked all the way through. It was from Tesco so almost certainly has added water? I do occasional buy from Costco but have to rely on friends membership.
I'm glad to know the oils/water are ok so many many thanks for the replies.0
