Does anyone make their own Hash Browns?

    I tried googling for a recipe but much of the results came back for what I assume is the American version of hashbrowns - just plain potato, or with cheese. I'm trying to replicate the wedge-shape, potato-and-onion hashbrowns, e.g. like McCains.
    I found the BBC recipe for fresh hashbrowns, made by frying grated potato & onion (and an egg to bind) which were delicious but I'm not sure how best to adapt this to make them freezable to later cook in the oven. I did a dummy run (25kg sack of potatos to get through so we had spare to experiment!) and just fried them until they were only just starting to go golden, then dried them off and froze on a tray. The plan is to give them 15-20 mins in the oven like regular hashbrowns. Not entirely sure if it will work though!

    Just wondering if anyone else has done HM hashbrowns and how they went about it?

    I think it will work, it does with roast spuds, in fact I may well give it a go later myself as I love hash browns.

    Thanks, I've frozen HM wedges and roasties before but just parboil the potatoes for 5 minutes first then freeze (or oil, season and freeze for the wedges). I'm wondering if I should have done that and then just shaped into patties and frozen without the frying stage - could do that tonight for comparison!

    Thanks, but it doesn't mention freezing them and that's the bit I'm trying to get to the bottom of, as I don't think I could survive eating 25kg of freshly-made hash browns over the next week or so! :rotfl:

    Just to say the part-frying method worked. I've chucked the frozen hash browns in the oven for about 25 mins, as per store-bought ones, and they go nice and crispy on the outside. Perfect :)
