Paying HMRC money by Chequ, whom is cheque payable too?

To pay Hmrc, income tax (for some unpaid due tax) with a cheque
then whom is the cheque payable to?
who is it made out to?
Cheque will be the only method of paying.

You should have had had a payslip with payment methods on the back. HMRC's website has this info:
"If you do need to pay by post please:
make your cheque payable to 'HM Revenue & Customs only' followed by your UTR
send your cheque and payslip to HMRC using the pre-addressed envelope, if you were sent one, or use the address below
don't fold the payslip or cheque and don't fasten them together"
