2-weeks meal plan

Hi all - I could do with some help. I've got a hectic couple of weeks coming up and need to organise some meals which will need minimal evening prep. Just did a freezer inventory and I have:

Salmon fillets - 13
Pork chops/steaks - 22
Lamb chops - 4
Mince - 2 packs
Prawns - 1 pack
Chicken thighs - 2
Chicken breasts - 4
Bacon - 1 pack

I'm going to shop for veg today (fresh & frozen), and am thinking of doing fish pie tonight, but I could do with suggestions for easy meals for 2 for when I come home tired. I have a crockpot so stews/curries can happen, and we do tend to go for plain meals (meat, spuds, veg). Hubby won't eat sweet veg so no corn, carrots etc. Got the usual cupboard stuff like rice - we don't do wheat so no pasta/pies. Any off-the-top-of-your-head easy wins here?

    I suggested pennyskichen blog and thrifty Lesley to previous thread (no money for three weeks help with menus).Both of these might be useful to you.Both cook for 2adults mainly and both have some menu plans,and very thrifty recipes.Lesley does a lot of veggie type meals,Penny does daily email menues,useful for when you get stuck for ideas(free to subscribers). Good luck!

    If your after Not cooking when you get in, I think batch cooking would be your best bet. Fish pie, bolonese, chilli con carne would be suitable along with loads more. Just cook loads, freeze in individual portions or a potion for two. Take out to defrost the night before and warm up when you get in. You would just have the extras to do then, sricei, garlic bread, veggies etc all a matter of banging them in the oven or hob.

    I cooked a batch of mince from 2 packs of minced beef mixed with a tin of tomatoes,handful of lentils ,oats tomato puree,garlic &seasoning,plus extra water Made spaghetti bolognaise for tea and froze rest in plastic tubs for future menues.
    As others have said,batch cooking helps and slow cooker is your friend!(Also microwave very handy).

    Frugal queen cooks for 2 and she uses lots of slow cooker recipes,and has ideas for quickly cooked meals.She also works full time so likes to come home to food already cooked,or something fast.

    She also does not eat wheat,mostly gluten free meals.
    Well worth a look.

    Thanks - I've just seen my work schedule for the next 2 weeks and it's minimum 15-hour days (6am-9pm) so I'm abdicating all responsibility for cooking now. Hubby can make himself omelettes and I'll eat what I can before I leave work. No time even for batch cooking.

    Italian Pork Chops.
    1medium onion,finely chopped
    1green pepper,seeds removed,diced
    1 Tbsp olive oil
    2 pork chops
    225g courgettes,thinly sliced
    3tomatoes,skins removed,roughly chopped
    1 tsp dried oregano
    1 Tbsp wine vinegar
    Salt and freshly milled black pepper
    1/4 pint boiling chicken stock.(or could use apple juice)

    Scatter the onion and pepper in the bottom of the slow cooker.
    Heat the oil in a non-stick frying pan,add the chops and brown quickly on each side.Transfer to slow cooker
    Stir together remaining ingredients and spoon over the chops.
    Put lid on and cook on LOW for 5-8 hours.

    Simple prawns and tomatoes

    1tbsp oil
    1 onion
    1clove garlic
    1 carton or tin of chopped tomatoes
    170 g cooked peeled prawns
    50 g cheese (feta is good)
    A handful of fresh parsley

    Fry diced onion in oil in frying pan Crush or s finely slice garlic and add to pan
    Cook until onion starts to soften.
    Pour over the chopped tomatoes,stir thoroughly.
    Toss in the prawns and warm through.
    Chop parsley and crumble the cheese.Serve the tomatoes prawns with the cheese and herbs scattered on top.
    You could leave out the cheese and add 1 chopped red chilli,1 sliced pepper and the juice 1/2lemon or lime to the pan at the same time as the onions and garlic,

    Or replace the parsley with fresh basil and add a splash of orange juice or grated orange zest with the chopped tomatoes.

    Wow they are long hours! Sorry I didn't see your last post before I posted.Still trying to get used to this,never been on a forum before.Son bought me a Tablet for Christmas and still learning!Takes longer at my age .Never mind when things get less hectic the web sites will come in handy for future reference.
