Fruit Cobbler Recipes

Can anyone direct me to the recipie/method for Cobbler?

I can't seem to find it :rolleyes: .

    Cobbler is simply a scone mix, either sweet or savoury. Scones are very popular in New Zealand and this is a traditional recipe. If you want sweet scones, add sugar.

    timer.gif 20 min 10 min prep
    3 cups plain flour 6 teaspoons baking powder 1/4 teaspoon salt 75 g butter 1-1 1/2 cup milk extra milk


    1. Sift flour, baking powder and salt into a bowl.
    2. Cut butter in until it resembles fine breadcrumbs.
    3. Add milk and mix quickly with a knife to a soft dough.
    4. Knead a few times.
    5. Lightly dust an oven tray with flour.
    6. Press scone dough out onto this.
    7. Cut into 12 even-sized pieces.
    8. Leave a 2 cm space between scones.
    9. Brush tops with milk.
    10. Bake at 220C for 10 minutes or until golden brown.
    For cobbler make small round scones to overlap round the dish. I sprinkle sweet scones with sugar.:p

    Does it have a 'sconey' crust? Anyway, I'm making it tonight with a tin of value fruit salad.

    I had always thought a cobbler was scones on top of something stewy, sweet or savoury. Every day is a learning day on Martin's Money Tips Forum!;)

    No, it doesn't have a scone crust - I think it must be the American version of cobbler! On the other hand, it is very cheap and easy!
    The texture of the crust varies according to how liquid the fruit is. You can use fresh, cooked or tinned fruit. I drain tinned fruit when using it.

    Hi Chipps, I made this last night and it was lovely. I think the dish was too big as the spongy mix didn't come over the fruit cocktail but up and around it.

    It reminded me of a clafoutis, a french batter dish. As there is no fat and only a bit of sugar in your recipe it is not only delish but also good for us. I used drained value fruit cocktail. Also as I can't find my 1/2 cup measure I used the 1/3rd. As it is an equal quantity mix it doesn't matter.

    That sounds about right. The texture varies a lot, according to the type of fruit used.
    And as you said, it is an equal mixture recipe, so it doesn't really matter what you use to measure amounts.
    In fact, to be fair, the other recipe mentioned in post 2 is almost exactly the same, but using a different size measure ( a mug) .....

    I've had a clear out of my cupboards today and have lots of tinned fruit.

    I'm not sure why I ever bought it :o :rotfl:

    Anyway, has anyone got any ideas on what i could do with it?

    I'm sure I saw a thread on here ages ago for a cobbler recipe saying you could used tinned fruit but I might have imagined it:confused:

    If anyone has a recipe it would be appreciated.

    Or if anyone else has any ideas on what to do with my tinned fruit :D

    I really dont know how it all got there :o

    I have pineapple, LOTS of pears & some mixed fruit :)

    And I have all the other ingredients in so may even get round to cooking it :)
