Udon noodles

Does anyone now how to cook udon noodles?? I boil mine and then cool them down under the tap but mine are always a bit slimey!!!

    If I do cool noodles, I coat them in a drop of sesame oil when cold to give them a better texture. Haven't done udon noodles, but it works for normal noodles

    mmm i love udon noodles. I got the wagamama cookbook for my birthday and tried out their amai udon yesterday... it was the best food I've had in weeks! as good as the real thing!

    I just cook and pour cold water over them to cool/rinse, then leave them in the colander in the sink to drip for a while while I'm cooking the sauce or whatnot, yesterday they were sitting there for at least 10mins and they 'dried' nicely without slime. mmm.

  • I find adding the sesame oil helps too - stops them sticking together too much. Where do you buy your udon noodles?

    I buy mine at Win Yip in Purley. Awesome place for hard to find ingredients.

    udon noodles don't actually need to boil. i sit mine in water that has just boiled for about 3-5 minutes.

    then they're ready to just add to a soup, or to cook in the wok briefly at the end of a stir fry.

    I usually finish mine off in the wok (I usually have udon noodles with chicken or salmon) which works really well, ever since a taiwanese friend told me how to do that.

    If your noodles are slimey it means they've been overcooked. Reduce your cooking time and they'll taste better.
