Forgot to taken chicken out of freezer.

Ok, I forgot to take more chicken out of freezer so only have one defrosted large boneless chicken breast fillet....for evening meal to feed 4. :eek: help please!

You could just boil the frozen chicken, but a chicken breast should be enough to make a curry for four if you add lots of vegetables.0

Take some more out of freezer, and thaw individually in sandwich bags in bowls or pans of tepid water. Keep checking the water, change it when it feels really cold.
Don`t worry, I do this quite often , have done for ages, and it does work. I don`t like defrosting in microwave. This method also works for stuff like pork steaks as they aren`t very dense.
I wouldn`t try it for larger joints or meat on the bone though.0 -
Or just microwave for an amount of time on defrost?
As you're cooking the chicken straight away, it shouldn't matter about defrosting it quickly.0 -
You've probably done it by now but just in case...
If you're going with the one defrosted piece of chicken you have, what you need to do is slice it up into small pieces that you can distibute through the meal so that everyone gets some meat. So the curry, as already suggested, or a stir fry with lots of crisp veggies and some rice/noodles. Or a pie (if you have any ham or bacon they'll go nicely with it). Lots of vegetables, whatever you decide, to distract the hordes from the fact that there's not the usual amount of meat available.0 -
Thanks for all suggestions. I ended up using just the one piece and made a carbonara bulked out with carrots and mushrooms-and there was loads and it was lovely. I might try using less meat in future for some meals as we didn't feel meat deprived at all!GE 36 *MFD may 2043
