I was intending on making the below recipe, obviously a vegetarian version as one does not eat meat. I was just wondering if anyone knows where I would be able to buy the following item: ROUND WON TON SKINS? I've looked at supermarkets but they don't.

Do you have a Chinese/oriental supermarket near you? They would definitely stock them. Might be called 'Wonton wrappers' on the packaging; or just ask for them.
Or if you have a Chinese restaurant or takeaway, ask there - they might sell you some if you only want a few.

To make it super-easy, I would mix the ingredients in the food processor, and knead the dough in there, too; if you have a food processor with kneading attachment, that is.
And super-duper-easy if you have a pasta maker as well, to roll out nice and thin.
