Bank using set off to pay statute barred credit card debt

If the default has dropped off, then they cannot put anything new on your credit file. Once the account has dropped off due to the default being 6 years old, nothing more should ever be recorded about it, no matter what you do with the account.
Even if the creditor reported to the CRA that it had been settled, the CRA would not re-add anything on your report. They drop the account off your report completely, including any past or even future changes in it's status. All trace of it should be gone for ever, no matter what.Free/impartial debt advice: National Debtline | StepChange Debt Charity | Find your local CAB
