it's been a long merry day but I find myself here draining bottle 4 of red so I can pat myself on the back for being paranoid enough to come back here / earn loads, spend more. let's see if i can come back here in the cold light of morning.

One of the first things you will need to do if you're going to sort your problem out is sit down and do a Statement of Accounts. All your income - all your expenditure. Then you'll be able to start seeing the wood for the trees and analysing where your money is going every month.
Once you know where it's disappearing off to - it's a lot easier to stop it.
